Rich and fresh, like a zesty lemon tart with a buttery crumbly crust, Sarah first visualizes her desserts as a design, chooses harmonious colors, picks her ingredients to maximize flavour, organic lemons in this instance, and gets to baking. Each piece is an edible jewel. In fact, Sarah’s journey into baking started with ‘a deep love for the arts.’ Since her childhood, she was always painting, drawing, experimenting with color, and it is her love for the beautiful that led her to pastry ‘where I could combine my creative vision with delicious flavors.’ She decided to study at Le Cordon Bleu to refine her skills and deepen her knowledge of the art of desserts. The young chef takes great care to ensure each piece is delicious but also visually captivating. Each of her creations comes with an intriguing play of flavours, chocolate orange brioche buns, macarons kallistés (with honey and citrus), or a dreamy vanilla marshmallow cloud pillowed between two layers of chocolate biscuits, with a molten salted caramel heart, luscious bites conceived like works of art. Pastries, cakes, chocolate, the young lady is also now expanding her offering with custom wedding cakes infused with her signature artistic touch, as well as catering for special occasions.
This week, to celebrate love, the chef added a twist of romance to her desserts with a delicate and lush heart-shaped Saint Honoré with pops of pink and tender chocolate inside. She adds ‘expect bright, playful pastries that bring joy and color.’ We spot bicolor croissants with a popping raspberry shade and delicacies in hues of pink and purple. Sarah is also crafting some flavourful pieces for Ramadan, ‘cakes and tarts with a twist, incorporating oriental flavours like pistachio, rose and cardamon,’ in her sleek modern creations. The selection will feature pistachio cakes, rosewater infused tarts and delicate date pastries designed to delight our senses. We discovered Sarah through her mouthwatering Instagram page where each piece is beautifully captured in an image or video taking us through her process; a punchy colored cake that starts with a dough sprinkled with fresh strawberries, filled with vanilla cream, then topped with white chocolate and strawberry coulis, or a glazing beauty composed of a cocoa tart, stuffed with a signature crushed pistachio crunch, apricot confit, a layer of chocolate almond sponge then a dulcey mousse with vanilla bean.
